I came to Belize on a one year contract for Ramada Caribbean. I remained fourteen years! While there I worked as a Chef at a privately owned island, an Executive Chef at two major resorts, a restaurateur at my own well known establishment, Bob's Bar & Grill, and as a caterer for many people, including the American, Guatemalan, and European Union ambassadors, as well as many film celebrities, politicians, and businessmen. I don't want readers to think that this book is a guide to opening a business in Belize. It's more of a personal account of what I had to go through, how I did it, and what came out of it. Those who are thinking of opening a business in this lovely country will find it informative, and those who are just curious, will find it interesting if not hilarious!
