Marie Callender's is a restaurant in Southern California that's known for its wonderful cornbread (and they even sell the mix, but it's pricey:) Years ago, I was able to find out their secret (directly from the source) and have been making it that way ever since. It's a lighter, higher, slightly sweet cornbread with a smooth, even cakey texture. Make a big pot of chili, this cornbread and a green salad to serve a CROWD at a reasonable price!
