CHICKEN ENCHILADA CASSEROLE ...

This recipe was really making the rounds one year when I lived in Southern California. I think everyone in our Women's League made it at least once for a luncheon (not including the numerous times it was made for dinner!). It's a real FAMILY PLEASER! Very easy to put together and can be assembled the DAY AHEAD. Fresh chicken, tortillas, lots of cheese with spices and herbs ~ all layered together (similar to a Mexican "lasagna") ~ baked and cut into squares to serve. (An added bonus: When you simmer the chicken to cook it, you'll end up with nice, homemade chicken broth to make soup with another day that week!)
