Quick and Easy Fish Cookery

There is a general feeling that preparing fish is complicated and time consuming. I hope to illustrate this is not so in the following chapters. The recipes require no special equipment or intricate skills, and with the exception of a few seasonal species, the fish are readily available, either from the fishmonger or supermarket.
