Almond Milk

Almond milk, made from finely ground almonds and water, has been in use since at least as far back as the Middle Ages, from Europe to east Asia. Before refrigeration was available, milk could be made from almonds whenever needed and either consumed directly or used in a variety of recipes. Almond milk has enjoyed a tremendous surge in popularity recently, especially now that a number of quality commercial almond milks have become available in a range of types and flavors. Gourmet chef Alan Roettinger provides recipes for homemade almond milk, in both light and creamy versions for use in different applications, as well as almond kefir, thick almond creams, and other building blocks for creating delicious almond milk-based dishes.
