The English Market is a Cork institution and one of my favourite places in Ireland to shop. As soon as you walk in you can feel the energy of the place, the hustle and bustle as traders and customers exchange not just food but advice and stories. I am always inspired by what's on offer there, immediately wanting to gather up ingredients to cook with or eat some of the delicious food being prepared.
The English Market has such an exciting melting-pot of different cultures all under one rood. There are the second and third generation butchers selling tripe and drisheen, as well as the more exotic stalls selling ingredients from Asia or further afield. At its core, the difference between a market stall and shop comes down t the interaction between a market stall and shop comes down to the interaction between seller and customer. Each seller is an expert in what they're making and selling and the advice they offer is the produt of years of experience. With all those stalls in the market, that makes for a real wealth of experience! Thankfully, this book has finally distilled all that expertise and knowledge to bring you a collection of wonderful recipes from so many of the well-loved traders. This recipe collection is as eclectic as the market itself, with food ranging from the traditional to the obscure. It is a piece of Cork history and a book to treasure.
