Minnie's Kitchen

This is a very special cookbook named for my great-grandmother Minnie Westbrook. She is the reason I was inspired to compile a cookbook with recipes from family and friends. Several of the recipes sent in by family members are Minnie's very own recipes. It is filled with lots of yummy Southern dishes from some of the best cooks I know.

The proceeds from this cookbook will be going to my cousin Erin Holt, who is Minnie's great-granddaughter as well. Erin was hit by a drunk driver in the early hours of November 1, 2013. Erin suffered severe head trauma. She is doing much better but she is still in need of a lot of therapy that insurance will no longer cover.

My hope is you will enjoy all of these dishes as much as my family and I have. As you prepare each dish, my you know that you have helped my sweet cousin Erin on her road to recovery.
